The Stryd app on your Apple Watch will show and record heart rate information (when privacy permissions are set correctly). The Apple Watch has an optical heart rate monitor built-in. This technology is not perfect and sometimes gives incorrect HR information. Stryd cannot correct the HR data and simply displays HR data as measured by the Apple Watch. If you are seeing odd HR data, it means that the Apple Watch provided odd HR data to the Stryd app.
You can improve your heart rate data by using an external HR monitor with your Apple Watch. Follow Apple's instructions to pair your Bluetooth HRM with your Apple Watch!

The onset of HR monitoring after I initiate the Stryd run/workout is not consistent. Sometimes I see it shows 0 for 3-5 mins and then starts monitoring properly; other times I see it stuck at 170+ beat/min (my max HR is around 185) for couple minutes; there are also times when it starts much earlier than 3-5 mins or instantly.
I don't see this behavior when using Apple native workout app but see similar pattern when using Strava directly. I'm using Apple Watch version 4 on WatchOS 7.3 currently.
I can confirm and can exactly report the same issue and behavior.
